Slow Cooker Beef Stew
A hearty and comforting beef stew cooked slowly in a crockpot, resulting in tender meat and flavorful vegetables.
Ingredients:
- 2 lbs beef stew meat
- 4 potatoes, peeled and cubed
- 3 carrots, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 can 14
- 5 oz diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons flour optional, for thickening
Instructions:
Put potatoes, carrots, onion, garlic, and beef stew meat in a slow cooker
Put in tomato paste, thyme, rosemary, salt, and pepper, along with beef broth
Mix everything together by stirring
Put the lid on top and set the cooker to low for 8 hours or high for 4 hours
If you want the stew to be thicker, mix some flour with water to make a slurry and add it in during the last 30 minutes of cooking
When it's done, serve it hot and enjoy!
