Herbed Turkey Burgers with Zucchini Buns
Ingredients:
- 1 lb ground turkey
- 1/4 cup fresh breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh basil, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 medium zucchinis
- 1 tablespoon olive oil
- 4 lettuce leaves
- 4 slices of tomato
- 4 slices of red onion
- 4 tablespoons mayonnaise
- 4 teaspoons Dijon mustard
Instructions:
In a mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, chopped basil, salt, and black pepper
Mix until well combined
Form the turkey mixture into 4 burger patties
Preheat a grill or grill pan to medium-high heat
Slice the zucchinis lengthwise into thin strips to make 'buns'
Brush both sides of the zucchini slices with olive oil
Grill the turkey burgers for about 4-5 minutes per side or until they are cooked through and have nice grill marks
While the burgers are cooking, grill the zucchini slices for about 1-2 minutes per side until they are tender but not mushy
To assemble the burgers, place a lettuce leaf on the bottom zucchini slice, then add a turkey burger patty, a slice of tomato, a slice of red onion, and a dollop of mayonnaise and Dijon mustard
Top with another zucchini slice to complete the burger
