It's a satisfying and hearty meal that's perfect for lunch or dinner.

Ingredients:

  • 4 large portobello mushrooms, stems removed and sliced
  • 1 large onion, thinly sliced
  • 2 bell peppers, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 hoagie rolls
  • Vegan cheese sauce store-bought or homemade
  • Fresh parsley, chopped for garnish

Instructions:

Get the oven ready by heating it up to 400F 200C

Add sliced portobello mushrooms, onion, bell peppers, and minced garlic to a large baking dish

Add olive oil, soy sauce, smoked paprika, garlic powder, onion powder, salt, and pepper

Toss the vegetables until they are well covered

Put the vegetables in an oven that has already been heated and roast them for 20 to 25 minutes, stirring them every so often, until they are soft and slightly caramelized

To warm up the hoagie rolls, put them in the oven for a few minutes while the vegetables roast

When the vegetables are done, put together the sandwiches by putting a lot of the roasted portobello mixture in each hoagie roll

Put some vegan cheese sauce on top of each sandwich

If you want, you can add chopped fresh parsley as a garnish

Serve right away and enjoy!
